Smoked Chicken Tikka with Baked Broccoli



Sometimes or should I say very often, don't feel like making rice and a curry and a fried dish and a vegetable as it gets a bit hectic. So on such lazy days I turn to continental stuff which is so simple yet is so wholesome and tasty and can very well be compared to any restaurant quality meal.

Chicken Tikka:

ingredients:

Any ready - made tikka mix - half a packet for 1 chicken
lemon juice - 2 tbsp's

That's it! No ginger - garlic, nothing.

Method:
Just apply the tikka masala and lemon juice to the chicken. Keep for half an hour and fry on a pan for 10 minutes on either side, until slightly charred. Do not use too much oil, otherwise the charred effect does not come.
Optional for the smoked flavour:
Then you can burn a coal and place it in a small metal bowl. Pour ghee or oil immediately and cover this with a large sized lid or foil. Open it after 15 minutes and you feel feel you have barbecued the chicken outdoors. 


Baked Broccolli:


1 broccoli cut into small bit sized pieces
cheese - any cheese you have at home
Bechamel sauce
salt and pepper to taste
1 small onions - chopped fine ( 1 for the sauce and 1 to put in the dish)

Bechamel sauce method: ( My style)

Fry a small finely chopped onion, add 1 green chilli, cheese, milk. Let it cook for a minute. Add
(slurry) 1 tbsp. cornflour mixed with water to bind. I also add a tsp. of mustard sauce at the end as it gives a lovely tang to the sauce.

Normal bechamel sauce is made like this: 

Add 1 tbsp. of butter, add 1 tbsp. of flour. Fry till you get an aroma. Add milk and mix well so that no lumps are formed. Add salt and pepper to taste.

Method:

Take a baking dish and put the broccoli, followed by the bechamel sauce mix well. Add 1 raw onion chopped finely and mix well. Last add pieces of cheese all over in dollops or pieces. Bake till golden from the outside. 

Enjoy with roast meat or chicken tikka or pork ribs or anything you fancy but cook and give this a dish try !
