Spicy, Clear Thai Soup








Ingredients:

Vegetables of your choice- broccoli, mushrooms, carrots, bokchoy go well with this recipe.
Chicken - use a breast piece
Ground Paste:
crushed lemon grass - about 3 stalks

green chillies - 3
black pepper - 1 tsp
coriander stems - about 1 tbsp ( use the lower part and not the leaves)
garlic paste

Method:

Take 2 chicken stock cubes and add about 4 cups of water. Add the paste of crushed lemon grass, green chilli, black pepper, coriander stems and garlic paste. Add galangal ginger crushed or sliced, 2-3 " big piece (gives a good flavour) Add chicken breast pieces boil just for about 4 minutes or it turns rubbery and dry.

Remove the chicken breast pieces and keep them aside. Slice them thin once cool.

Add vegetables to the broth.

To Serve:

Place the boiled noodles in a bowl. Top off with some chicken breast slices, pour the broth and last garnish as desired.

Garnish with- fried garlic, garlic oil, red chilli flakes and coriander leaves.
